Just For Starters and Easy Potato Corn Chowder

Ginger Beef Soup
3 cups of beef broth (can be made with chicken broth as well if you leave the beef strips out)
1/2 tsp dark brown sugar
2 tsp minced ginger
1/4 tsp soy sauce
1 cup sliced mushrooms (any kind)
1 cup chunked zucchini
2 cups baby spinach
1 cup cooked beef strips
tabasco or Mongolian fire oil (found in the Asian  section) to taste

Add all ingredients to  a saucepot.  Bring to a boil and simmer.  5 min before serving, add the rice noodles and cook until softened.

Turkey Hash
1 bag of tater tots
2 cups chopped turkey
1 1/2 cups chicken broth
1 clove of garlic, chopped
2 Tbsp chili sauce (found in Asian section of your supermarket)
2 Tbsp butter
2 Tbsp chopped parsely

Melt the butter in a large skillet.  Add tater tots and cook, stiring until thawed.  Add turkey, broth, and garlic.  Stir to combine.  Add chili sauce.  Let hash simmer until all the liquid is absorbed, approx (10-20 min).  Toss the hash and garnish with fresh parsely.

Sausage, Cheddar, and Apple Bake
1 Tbsp butter melted
6 slices bread
1 lb sausage,  browned, drained, crumbled, cases removed
2 Tbsp fresh thyme
1 med. apple, peeled, cored and chunked
2 cups shredded cheddar cheese
6 eggs
2 cups milk

Preheat oven to 400.
Brush melted butter on the bread and place them side by side in the bottom of a 13x9x2 glass baking dish.
Crumble the cooked sausage over the bread.  Scatter the thyme and apple slices on top of the bread.  Sprinkle the cheddar cheese so that it covers the top of the casserole.  Whisk together the milk and eggs, pour on top of the casserole.
Bake the casserole until it puffs up and is golden brown.  25-30 min.

Spaghetti with Tuna, Tomatos and Feta
Cook  1/2 box spaghetti, reserve 1/2 cup of pasta water
In skillet, use 2 Tbsp olive oil.  Saute 1 cup chopped onion and 2 Tbsp garlic in olive oil.
Add to skillet 2 Tbsp tomato paste
3 Tbsp fresh parsely
1/2 cup sundried tomatos, chopped.
Add 1 cup white wine and 1 can tuna drained

Add cooked pasta directly to pan.  Add pasta water to thin the sauce if necessary.  Crumble in 1'2 cup feta cheese.  Garnish with fresh parmesan and capers if you like.


Easy Potato chowder
4 slices of bacon, cooked and crumbled
1 bag of tater tots (any flavor)
1 cup of corn kernels (fresh or canned-make sure you drain if canned)
2 cups milk
1 can chicken broth
dash of hot sauce (to taste or omit)
2 tsp of fresh parsley
salt and pepper

In a heavy saucepan heat  the tater tots  until slightly thawed.  Add the corn, milk, and chicken broth to the pan and bring to a simmer.  The more you stir, the more you will break up the tater tots.  Reduce the heat and to low and let simmer for about 12-15 minutes.  Add bacon, hot sauce, parsley, and pepper.
