Peanut Butter Cookies
1 stick butter (soft)              1 1/4 c flour
1 c light brown sugar           1/2 tsp baking powder
3/4 c creamy peanut butter  1/2 tsp baking soda
1 egg                                   pinch of salt
1/2 tsp vanilla

Preheat oven to 350

Mix butter, sugar until creamy.  Add peanut butter, egg, vanilla.  Mix until smooth.  In a strainer, sift flour, baking powder, and baking soda, and salt.  Sift mixed flour into wet ingredients and mix completely.  Roll into balls, flatten with a fork dipped in flour.  Sprinkle with white sugar.

Bake 9-11 min
Let cool on wire rack. 

Waffles
1 1/2 c flour
3 tsp baking powder
pinch of salt
2 tsp sugar
2 eggs
1 tsp vanilla
1 1/4 c milk
3 Tbsp melted butter

Sift the flour into a bowl with baking powder, salt, and sugar.  Beat the eggs, milk, vanilla, and melted butter together in a second bowl.  Add the dry ingredients into the egg mixture and combine. 
Spoon the batter into a heated waffle iron.  The waffles will be cooked when the steam no longer rises from the waffle iron.

**You can also substitute your prefered baking mix for the dry ingredients.  Reduce the eggs to 1 and the milk to 1 cup.  I still add the baking powder to the baking mix to give "extra lift" to the waffles.**
Waffle Sandwiches
1-2 Prepared waffles (Homemade or frozen work fine)
1/4 cup apple sauce
2 tsp crushed walnuts
drizzle of maple syrup

Toast waffles.  Cover waffle with apple sauce, walnuts, and syrup.  You can stack another one on top and make a waffle sandwich.....DELICIOUS!

Rocky Road Bark
16 oz chocolate chips
9 Tbsp butter
1/4 c corn syrup
(melted together over low heat)  Take out 1/2 cup of melted chocolate

Crumble  2 c sandwich cookies
2 cups mini marshmallows
Add cookies and marshmallows to the chocolate.  Stir until combined.

Prepare a 9 inch pan with aluminimum foil or wax paper. Pour the chocolate cookie mix into the pan and pour the reserved 1/2 of chocolate on top.

Refrigerate until hard- 2 hours or so.  Take out and cut into squares.


Cornbread
1 stick unsalted butter (soft)         3 tsp baking powder
2/3 c sugar                                   pinch of salt
2 eggs (separated-room temp)      1 c milk (room temp)
1 c flour                                        1 c yellow cornmeal

Preheat oven to 400
Grease or spray a skillet (cast iron works the best!!), muffin tin, or bread pan with shortening or cooking spray.
In large mixing bowl, cream the butter and sugar, and add the egg yolks.  Stir well.  Using a sifter or strainer, sift the flour with baking powder and salt.  Add the dry ingredients to the creamed butter, sugar, and egg yolks.  Stir in the cornmeal until combined.  In a seperate bowl, beat the egg whites until soft peaks form.  Fold them into the cornmeal mixture until combined.
Pour the batter into the prepared pan.
Bake in preheated oven for 25 minutes or until brown.
